How to Make Vegan Cashew Cheese Fondue

Hello!

This raw food recipe post was inspired for New Years Eve. I saw an article in the local newspaper about making a healthier low fat fondue for News Year Eve. The recipe mixed a bunch of “low-fat” cheese  served with the traditional bread for dipping. I knew I had something better and that fondue can be enjoyed without dairy.  Click play on the video below to watch me make the vegan cashew cheese for New Years Eve 2011. Vegan Cashew Cheese Fondue

Makes  8 servings

Ingredients:

1 c. cashew pieces

¼ c. pine nuts

1 carrot

½ red bell pepper

3 tbsp nutritional yeast

2 tbsp agar agar

4 or more thsp water

Juice of ½ lemon

1 c water

1/4 tsp sea salt

 

Steps:

  1. Mix agar agar with 4 tbsp of water
  2. Toss everything in blender
  3. Pour into serving bowl and enjoy with fresh veggies such as carrots, broccoli and sugar peas. The longer this recipe sits, the thicker it will get. So if you’re looking for a thicker fondue, make it 3 hours before serving.
